Three Greens for Silly Peas

 


Ingredients

  • 2 cups fresh or frozen peas
  • 1 cup Swiss chard, finely shredded
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons fresh mint leaves, finely chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Instructions

1. Prepare the Ingredients:

  1. If using fresh peas, blanch them in boiling water for 2-3 minutes until tender, then drain and set aside. If using frozen peas, simply thaw them.
  2. Finely shred the Swiss chard and set aside.
  3. Finely chop the rosemary and mint leaves.

2. Cook the Aromatics:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and chopped rosemary. Sauté for about 1 minute until fragrant.

3. Add the Greens:

  1. Add the shredded Swiss chard to the skillet and cook for 2-3 minutes until wilted.
  2. Stir in the peas and cook for another 2-3 minutes until they are heated through and well combined with the Swiss chard.

4. Finish the Dish:

  1. Add the chopped mint leaves, lemon zest, and lemon juice to the skillet. Stir well to combine.
  2. Season with salt and pepper to taste.
  3. Cook for an additional 1-2 minutes to let the flavors meld together.

5. Serve:

  1. Transfer the pea mixture to a serving dish.
  2. Garnish with additional mint leaves and a drizzle of olive oil if desired.
