Cornish Lobster Foam

 


Ingredients:

  • 1 cup of honey
  • 1/2 cup of beer (opt for an amber or high-flavor beer for more depth)
  • 4 egg whites
  • Salt and pepper to taste
  • 200g of lobster meat (already cooked and chopped into chunks)
  • Microgreens for garnish

Instructions:

  1. In a large bowl, mix together the honey and beer until well combined.

  2. In a small saucepan, heat the honey and beer mixture over medium heat until it starts to lightly simmer. Reduce the heat and let the mixture simmer until it thickens slightly, about 5-7 minutes. Remove from heat and let it cool slightly.

  3. While the honey and beer mixture is cooling, whip the egg whites with a pinch of salt and pepper until soft peaks form.

  4. Gently fold the whipped egg whites into the cooled honey and beer mixture until well incorporated.

  5. Divide the lobster chunks among serving glasses.

  6. Using a spoon, carefully spoon a generous layer of the honey and beer foam over the lobster chunks in each glass.

  7. Garnish with microgreens to add a pop of freshness and visual appeal.

  8. Serve immediately and enjoy this delicious and sophisticated flavor combination.
