Ingredients:
- 4 medium potatoes, peeled and diced
- 2 green peppers, sliced
- 2 red peppers, sliced
- 1 large onion, thinly sliced
- 2 roasted peppers (you can use jarred peppers or roast them yourself)
- 3 tablespoons honey
- 4 cloves of garlic, minced
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
In a large bowl, mix the diced potatoes, green peppers, red peppers, and onion with olive oil. Season with salt and pepper to taste.
Spread the mixture evenly on a baking sheet.
In a small bowl, combine honey and minced garlic. Add a pinch of salt and pepper.
Roast the vegetables in the preheated oven for about 30-35 minutes or until the potatoes are golden and tender.
Once the vegetables are cooked, remove the baking sheet from the oven and drizzle the honey and garlic mixture over them. Stir well to ensure all ingredients are evenly coated with the sauce.
Return the baking sheet to the oven and roast for another 10 minutes, until the sauce has caramelized slightly and the vegetables are well infused with flavors.
After roasting, remove from the oven and let it cool for a few minutes before serving.
