Ingredients:
- 1 large grapefruit
- 200g smoked salmon
- 1 cup arugula (rocket)
- 1/4 cup pine nuts, toasted
- 1/2 cup Parmesan cheese, shaved
- 1/4 cup fresh dill, chopped
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
Prepare the Grapefruit:
- Peel the grapefruit and separate it into segments.
- Cut each segment into bite-sized pieces and set aside.
Assemble the Base:
- Arrange a bed of arugula on serving plates.
- Scatter the grapefruit segments over the arugula.
Add Smoked Salmon:
- Lay thin slices of smoked salmon on top of the arugula and grapefruit.
Make the Pesto:
- In a food processor, combine toasted pine nuts, Parmesan cheese, chopped dill, minced garlic, and extra virgin olive oil.
- Blend until you achieve a pesto-like consistency.
- Season with salt and pepper to taste.
Drizzle with Pesto:
- Drizzle the pesto over the smoked salmon and grapefruit.
Garnish:
- Garnish the dish with additional dill and a few more toasted pine nuts.
Serve:
