Scandi Rock Grapefruit Starter

Ingredients:

  • 1 large grapefruit
  • 200g smoked salmon
  • 1 cup arugula (rocket)
  • 1/4 cup pine nuts, toasted
  • 1/2 cup Parmesan cheese, shaved
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Grapefruit:

    • Peel the grapefruit and separate it into segments.
    • Cut each segment into bite-sized pieces and set aside.
  2. Assemble the Base:

    • Arrange a bed of arugula on serving plates.
    • Scatter the grapefruit segments over the arugula.
  3. Add Smoked Salmon:

    • Lay thin slices of smoked salmon on top of the arugula and grapefruit.
  4. Make the Pesto:

    • In a food processor, combine toasted pine nuts, Parmesan cheese, chopped dill, minced garlic, and extra virgin olive oil.
    • Blend until you achieve a pesto-like consistency.
    • Season with salt and pepper to taste.
  5. Drizzle with Pesto:

    • Drizzle the pesto over the smoked salmon and grapefruit.
  6. Garnish:

    • Garnish the dish with additional dill and a few more toasted pine nuts.
  7. Serve:
