Mackerel and Orange Salad

Ingredients:

- 2 mackerel fillets, cooked and flaked

- 2 oranges, peeled and segmented

- 1/2 cup fresh parsley, chopped

- 1 small red onion, thinly sliced

- 2 tablespoons olive oil

- 1 tablespoon white wine vinegar

- Salt and pepper to taste


 Instructions:

1. Prepare the Mackerel:

   - Cook the mackerel fillets by grilling, baking, or pan-searing. Once cooked, let them cool slightly, then flake the meat into bite-sized pieces.

2. Prepare the Oranges:

   - Peel the oranges and separate them into segments. Remove any seeds and cut the segments into smaller pieces if desired.

3. Assemble the Salad:

   - In a large bowl, combine the flaked mackerel, orange segments, chopped parsley, and thinly sliced red onion.

4. Prepare the Dressing:

   - In a small bowl, whisk together olive oil, white wine vinegar, salt, and pepper. Adjust the seasoning to taste.

5. Toss and Coat:

   - Pour the dressing over the mackerel and orange mixture. Gently toss the ingredients until everything is evenly coated with the dressing.
