Enchanted Forest Feast

  Ingredients:

- 1 whole rabbit, cleaned and cut into pieces
- 200g black olives, pitted
- 150g fresh blackberries
- 2 tablespoons extra virgin olive oil
- 1 large onion, thinly sliced
- 3 cloves of garlic, minced
- 1 cup chicken broth
- 1 glass dry red wine
- 2 sprigs of fresh rosemary
- 1 sprig of fresh thyme
- Salt and pepper to taste

 

Instructions:

1. In a large pot, heat the olive oil over medium heat. Add the rabbit pieces and brown them on all sides until well-sealed. Remove them from the pot and set aside.

2. In the same pot, add the sliced onion and cook until translucent. Add the minced garlic and sauté for 1 minute until fragrant.

3. Return the rabbit pieces to the pot and pour in the red wine. Let it simmer for 2-3 minutes to allow the alcohol to evaporate.

4. Add the olives and blackberries to the pot. Then, pour in the chicken broth until the ingredients are almost covered. Season with salt and pepper to taste.

5. Add the sprigs of rosemary and thyme to the pot. Cover it and reduce the heat to low. Allow it to simmer gently for about 40-45 minutes or until the rabbit is tender.

6. Serve the rabbit with olives, blackberries, and wild herbs over a bed of pasta, rice, or mashed potatoes. Garnish with fresh herbs before serving.
