- 1 teaspoon baking powder
For the Thyme-Infused White Foam:
- 1 cup milk
- 1 sprig fresh thyme
- 2 egg whites
- Salt to taste
Instructions:
Crackers:
1. Preheat the oven to 180 degrees Celsius.
2. In a bowl, mix the whole wheat flour, all-purpose flour, berries, salt, and baking powder.
3. Add olive oil and water. Mix well until you get a homogeneous dough.
4. Roll out the dough on a lightly floured surface using a rolling pin until you achieve the desired thickness.
5. Use a cookie cutter to cut out cracker shapes and place them on a baking sheet lined with parchment paper.
6. Bake for about 15-20 minutes or until the crackers are golden and crispy. Let them cool.
Thyme-Infused White Foam:
1. Heat the milk in a saucepan until it begins to boil. Add the thyme sprig and let it infuse for about 5 minutes.
2. Strain the milk to remove the thyme leaves.
3. Beat the egg whites with a pinch of salt until soft peaks form.
4. Heat the infused milk until very warm but not boiling.
5. Slowly pour the warm milk into the beaten egg whites while continuously beating until you achieve a smooth and white foam.
