Swiss Chard Fritters with Chickpea Tempura

Ingredients:

- 1 bunch Swiss chard, washed and chopped

- 1 cup chickpea flour

- 1/2 cup all-purpose flour

- 1 teaspoon baking powder

- 1 cup sparkling water (cold)

- 1/2 teaspoon cayenne pepper (optional)

- Salt to taste

- Vegetable oil for frying

- Lemon wedges for serving


Instructions:

1. Prepare Swiss Chard:

   - Blanche the chopped Swiss chard in boiling water for 2 minutes. Drain and set aside to cool.

2. Chickpea Tempura Batter:

   - In a bowl, combine chickpea flour, all-purpose flour, baking powder, cayenne pepper (if using), and salt.

   - Gradually whisk in sparkling water until you achieve a smooth, lump-free batter.

3. Coat Swiss Chard:

   - Dip each blanched Swiss chard leaf into the chickpea tempura batter, ensuring it's well-coated.

4. Fry to Perfection:

   - Heat vegetable oil in a deep pan to 350°F (180°C).

   - Carefully place the chickpea-coated Swiss chard into the hot oil and fry until golden brown and crispy. Work in batches to avoid overcrowding the pan.

5. Drain and Serve:

   - Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

   - Arrange the Swiss chard fritters on a serving platter and serve warm with lemon wedges on the side.

7. Garnish (Optional):

   - Garnish with a sprinkle of sea salt or your favorite herbs for an extra burst of flavor.
