Sorcerer's Soup

Ingredients:

- 1 onion, finely chopped

- 3 cloves garlic, minced

- 2 tablespoons olive oil

- 1 bunch fresh sage leaves, chopped

- 1 cup dry white wine

- 6 cups vegetable or chicken broth

- Salt and pepper to taste

- Grated Parmesan cheese for garnish (optional)


Instructions:

1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion becomes translucent.

2. Add fresh sage to the pot and continue to sauté for an additional 2-3 minutes until the sage releases its aroma.

3. Pour in the dry white wine, allowing it to simmer for 5 minutes to reduce and concentrate the flavors

4. Add vegetable or chicken broth to the pot. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 15-20 minutes.

5. Season the soup with salt and pepper according to taste.

6. Serve the Sorcerer's Soup hot, garnished with grated Parmesan cheese if desired.
