Sardine's Overdrive Crepes

Ingredients:

For the Crepes:

- 1 cup all-purpose flour

- 1 1/2 cups milk

- 2 large eggs

- 2 tablespoons melted butter

- Pinch of salt

For the Filling:

- 1 cup crumbled blue cheese

- 1 can (about 4.4 oz) sardines in olive oil, drained and chopped

- 2 cloves garlic, minced

- 2 tablespoons chopped fresh parsley

- Salt and black pepper to taste

For the Garlic Cream Sauce:

- 1/4 cup butter

- 3 cloves garlic, minced

- 1 cup heavy cream

- Salt and black pepper to taste


Instructions:

1. Prepare the Crepes:

   a. In a blender, combine flour, milk, eggs, melted butter, and a pinch of salt. Blend until smooth.

   b. Heat a non-stick skillet over medium heat. Pour a small amount of batter into the pan, swirling to coat the bottom evenly. Cook until the edges start to brown, then flip and cook the other side. Repeat until all batter is used.

2. Prepare the Filling:

   a. In a bowl, mix crumbled blue cheese, chopped sardines, minced garlic, chopped parsley, salt, and black pepper. Set aside.

3. Make the Garlic Cream Sauce:

   a. In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant.

   b. Pour in the heavy cream, stirring constantly. Season with salt and black pepper. Simmer until the sauce thickens.

4. Assemble the Crepes:

   a. Spoon the blue cheese and sardine filling onto each crepe, then fold or roll them.

   b. Drizzle the garlic cream sauce over the top.

5. Serve:

   a. Garnish with additional chopped parsley and cracked black pepper.

   b. The "Sardine's Overdrive Crepes" are ready to be enjoyed!
