Sant Lluís Island's Vegetable and Seafood Pie

Ingredients:

- 1 sheet of refrigerated puff pastry

- 500 g mussels, cleaned

- 2 dried ñoras (paprika peppers), hydrated and finely chopped

- 1 zucchini, grated

- 2 tablespoons fresh oregano, chopped

- 1 onion, chopped

- 2 cloves garlic, minced

- 2 tablespoons olive oil

- Salt and pepper to taste

- Eggs for egg wash


Instructions:

1. Preheat the oven to 200 degrees Celsius.

2. Roll out the puff pastry sheet onto a baking sheet.

3. Hydrate the ñoras in hot water for 10 minutes, then remove and finely chop them.

4. In a pan, sauté the chopped onion and garlic with olive oil until tender.

5. Add the cleaned mussels to the pan and cook until they open. Discard any that do not open.

6. Incorporate the grated zucchini and chopped ñoras into the pan. Sauté for a few minutes until well combined.

7. Add the fresh oregano and season with salt and pepper to taste. Mix well.

8. Spread the mixture over the puff pastry.

9. Fold the sides of the pastry towards the center, partially covering the mixture.

10. Beat an egg and use it to brush the pastry.

11. Bake for 25-30 minutes or until the pastry is golden brown.
