Lumberjack's Cabin Spicy Carrots

Ingredients:

- 4 carrots, peeled and diced

- 2 tablespoons butter

- 2 tablespoons flour

- 2 cups milk

- 1/2 cup grated Gruyere cheese

- 1/2 teaspoon cayenne pepper (adjust to taste)

- Salt and pepper to taste

- Fresh chives for garnish (optional)


Instructions:

1. Boil the carrots in salted water until tender. Drain and set aside.

2. In a medium saucepan, melt the butter over medium heat. Add the flour and stir constantly for about 2 minutes to create a base for the sauce.

3. Gradually add the milk, stirring continuously to prevent lumps. Continue until the mixture thickens and achieves a smooth consistency.
